Chicken Liver Pate
INGREDIENTS:
- 4 1/2 oz grass-fed butter
- 1 large organic onion, chopped
- 2 cloves organic garlic, crushed
- 2 slices organic, antibiotic free, rindless bacon, chopped
- 9oz organic pasture-raised chicken liver, trimmed
- 1/4 teaspoon dried thyme
- ground pepper
- 2 tablespoons grass-fed cream
- 1 tablespoon of brandy (optional)
- 10z grass-fed butter, melted
TOPPING
- 20z grass-fed butter, melted
- Herbs, chives & or bacon for garnish (optional)
INSTRUCTIONS:
- Melt butter in a pan, add onion, garlic and bacon.
- Cook until onion is tender & bacon is cooked.
- Add chicken livers and cook, stirring occasionally, for 5-10 minutes.
- Remove from heat.
- Stir in thyme, pepper, cream, brandy (optional) & melted butter.
- Spoon mixture into a food processor or blender & process until smooth.
- Pour into serving dishes.
TOPPING
- Pour melted butter over pate.
- Sprinkle with toppings of choice.
- Refrigerate pate overnight.
- *Let stand at room temp 30 minutes before serving
