Tri-Trip Dinner
INGREDIENTS:
- 1 untrimmed grass-fed tri-tip
- 2 tablespoons grass-fed ghee
- 2 tbs each of salt, organic garlic powder, and organic pepper (mixed together as seasoning)
EQUIPMENT NEEDED:
- Instant-read thermometer
- Large oven-safe skillet
INSTRUCTIONS:
- Preheat oven to 425°F
- Trim off any silver skin from the bottom of the tri-tip
- Sprinkle salt, pepper, and garlic seasoning over the whole tri-tip
- On the stove, heat ghee in an oven-safe skillet on high heat. Place the tri-tip fat side down.
- Cook on medium-high heat for 4 minutes.
- Flip tri-tip over and place skillet in the oven.
- Roast for 10-15 minutes per pound. Cook until internal temp in the thickest part of meat reads 135°F for medium-rare. Cover with foil for 10 minutes.
- Slice the roast by cutting in half at the center point and then across the grain on each end.
